  • Choose a pork butt roast with a good amount of fat for added flavor.
  • If you prefer a spicier dish, increase the chili powder, cumin and oregano to taste.

  • Substitute black beans for the pinto beans for a more nutrient-dense meal. The black beans are higher in fiber and protein, making this dish a healthier and more filling option.
  • Substitute turkey for the pork butt roast to reduce the amount of fat and cholesterol in the dish. This substitution will make the dish leaner and lower in calories, while still providing a flavorful and satisfying meal.

Vegetarian Crockpot Chalupa Replace the pork butt roast with 3 pounds of black beans, and replace the taco sauce with 4 tablespoons of salsa. Add 1 cup of corn for an extra crunch.

Mexican Rice: Mexican Rice is the perfect accompaniment to Crockpot Chalupa. It's a simple dish of cooked white rice with tomato sauce, garlic, and onion. It adds a delicious depth of flavor to the Chalupa and helps to balance out the richness of the pork and beans.

Refried Beans: Refried Beans are the perfect accompaniment to Crockpot Chalupa. They provide a creamy, savory flavor that pairs well with the spicy tomato sauce and pork in the Chalupa. Miss Dienia has posted another wonderful down home recipe. I thought I might have to doctor this up due to the fact that my crock pot is too small. But it turns out that it was perfect. My crock pot is only 4 quart, so I was only able to put in 3 1/2 cups of water. It turned out great. I didn't have to worry about thickening it. The only thing I will do different next time is put the full spice amount in. I erred on the side of caution this time. My husband is out hunting with his dogs; the house will smell awesome when he walks in the door. I didn't wait for him.
