"At home and going through some recipes I haven't made in years; I found some wonderful recipes. Some were given to me by friends, fellow chefs; in those forgotten miscellaneous cookbooks, or maybe they came with the appliance; and then of course those I printed out online. But all of these I have tried, changed them a bit to my tastes, and enjoyed, but unfortunately forgot. So, I am bringing them back. A very easy side dish - perfect for a potluck, dinner party, buffet type of dinner. Easy, delicious without all the work. Just add to the crock pot, mix and turn on. It is that easy and that good."

Step by Step Method
Step 1
Crock Pot ... Add the rice, mushrooms, scallions, broth, butter, salt and pepper to the crock pot and mix well. Cover and cook on low, 4-5 hours until the rice is tender. Remember, all crock pots are different, and some cook hotter than others. So, just give it a look after 3 1/2 to 4 hours. The size of your crock pot can also alter cooking times.
Step 2
Fruit ... Once the rice is done, add in the cranberries, apricots and nuts and mix well. Cook another 10-15 minutes and it's done. If you want to toast the nuts ... just add them to a dry saute pan on medium heat for 3-4 minutes until you begin to smell them and they start to get lightly brown. Remove to cool.
Step 3
Serve ... ENJOY! It is a great side dish to so many dishes.
