Ingredients

The ingredients are:
  • 1 1/2 cups wild rice (the real stuff, not a boxed blend)
  • 1 cup cremini mushrooms, sliced, not too thin
  • 4 scallions, diced (white and green parts)
  • 1/3 cup dried cranberries
  • 1/4 cup dried apricots, diced
  • 2 (15 ounce) cans vegetable broth
  • 1/2 cup walnuts or almonds (if you want you can toast them, but it isn't necessary)
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Crock Pot ... Add the rice, mushrooms, scallions, broth, butter, salt and pepper to the crock pot and mix well. Cover and cook on low, 4-5 hours until the rice is tender. Remember, all crock pots are different, and some cook hotter than others. So, just give it a look after 3 1/2 to 4 hours. The size of your crock pot can also alter cooking times.

  • Step 2: Fruit ... Once the rice is done, add in the cranberries, apricots and nuts and mix well. Cook another 10-15 minutes and it's done. If you want to toast the nuts ... just add them to a dry saute pan on medium heat for 3-4 minutes until you begin to smell them and they start to get lightly brown. Remove to cool.

  • Step 3: Serve ... ENJOY! It is a great side dish to so many dishes.
