Step by Step Method

Step 1

In a microsafe bowl combine the onions and salt and microwave them for 5 minutes; rinse and transfer to a paper-towel lined baking sheet and dry well -- ****very important this only works if onions are dried very well.

Step 2

In a dutch oven over high heat add the oil and onions and cook stirring frequently for 25-30 minutes or until onions are golden brown. Drain onions in a colander set in a large bowl (you can save the oil for other dishes - can be refrigerated for up to 4 weeks). Transfer onions to paper towel lined baking sheet to drain.

These came out crispy crisp and the flavor of onion concentrates done this way. Towards the end I found that I had to keep a close eye on it, as they can get overly brown just by turning away for a second. We served these topped over our kielbasa sandwiches which made for a perfect weeknight meal. Thank you ellie for sharing. Made it for Billboard Tag.
