Step 1: In a microsafe bowl combine the onions and salt and microwave them for 5 minutes; rinse and transfer to a paper-towel lined baking sheet and dry well -- ****very important this only works if onions are dried very well.
Step 2: In a dutch oven over high heat add the oil and onions and cook stirring frequently for 25-30 minutes or until onions are golden brown. Drain onions in a colander set in a large bowl (you can save the oil for other dishes - can be refrigerated for up to 4 weeks). Transfer onions to paper towel lined baking sheet to drain.
