Step by Step Method

Step 1

Sprinkle 2 teaspoons Cajun spice over the shrimp, toss to coat.

Step 2

Heat 2 tablespoons olive oil in a heavy skillet over medium-high heat. Add shrimp to skillet, and cook for about 2 minutes. Flip shrimp over and cook for 1 minute more. Remove to plate and set aside (chicken takes a little longer to cooked).

Step 3

Add remaining tablespoon of olive oil and heat until shimmering. Add peppers, onions, and garlic. Sprinkle on remaining Cajun spice, and add salt if needed. Cook over medium high heat until peppers and onions are tender. Remove all vegetables from the pan to a plate, and set aside.

Step 4

With the pan over high heat, pour in the wine and chicken broth. Cook on high for 3 to 5 minutes, scraping the bottom of the pan to deglaze. Reduce heat to medium low and pour in cream, whisking constantly. Cook sauce over medium-low heat for a few minutes, until cream starts to thicken the mixture. Add chili flakes or cayenne pepper, salt and pepper to taste. Add the vegetables to the sauce. Stir and cook for 1 to 2 minutes, until mixture is bubbly and hot. Add cooked penne or pasta of choice, and toss to combine.

Step 5

Serve spicy shrimp on top of pasta. Sprinkle with green onions for garnish.

  • When selecting shrimp, look for ones that are firm and plump with a mild, sweet smell.
  • For the peppers, choose ones that are firm, brightly colored, and have glossy skin.

  • Instead of shrimp, use diced chicken: This substitution is great for those who prefer chicken over shrimp, and it will still provide a delicious and flavorful dish.
  • Instead of penne pasta, use ziti: This substitution will provide a different texture and shape to the dish, making it more interesting and unique.

Vegetarian Variation Replace the shrimp with diced tofu. Cook the tofu in the same manner as the shrimp, but for a few minutes longer. Add a can of drained black beans to the sauce and vegetables before adding the cooked pasta.

Roasted Asparagus with Parmesan: This simple side dish is a perfect complement to the Creamy Spicy Shrimp & Bell Peppers. Roasting asparagus brings out its sweetness, and adding Parmesan cheese adds a salty, nutty flavor to the dish. The crunchy texture of the asparagus and the creamy cheese are a great contrast to the spicy shrimp.

Garlic Roasted Potatoes: Garlic Roasted Potatoes are a delicious side dish that pairs perfectly with the Creamy Spicy Shrimp & Bell Peppers. The potatoes are roasted until golden brown and crispy, and then tossed with garlic, olive oil, and herbs for a flavorful finish. The creamy shrimp and peppers provide a nice contrast to the crunchy potatoes, making this a perfect accompaniment to the main dish.

The DH and I very much enjoyed this for dinner last night. I did the prep work and he did the cooking which meant he did it his way and not necessary to recipe, all the ingredients went in as per recipe though due to intolerance issues had to cut back on the capsicum (used 1/2 a red capsicum) and the onion (used a shallot and cut it chunky). Thank you sweety_Lisa, made for Alphabet Tag Game at FF&F.
