Step by Step Method

Step 1

Top and tail the carrots wash, scrape and dry. Cut the carrots into matchstick strips.

Step 2

Heat the butter in a deep pan over a medium heat. Add the finely chopped onion and cook until a golden colour. Add the carrots and stir well.

Step 3

Dissolve the stock cube in 125ml hot water, add to the pan with the bay leaf.

Step 4

Reduce the heat and simmer until the carrots are tender, stirring frequently.

Step 5

Season with salt and pepper, remove bay leaf and stir in the cream just before serving.

Step 6

Garnish with extra bay leafs if desired.

Carrots are a real favouritue at our house which has me loving to add new to us recipes. I also love the look of matchstick carrots which saw this recipe not only taste great but made for great presentation. Have to love food that tastes as good as it looks. October 2020, this time around I made this with fresh from the garden carrots served over baked acorn squash, everyone gave it the thumbs up! Thank you for sharing!

Smells Like Salad

Multicolored carrots worked well with this recipe. I subbed homemade veggie stock for the bouillon cube/hot water, homegrown fresh bay leaf (1 leaf only-especially if you're using fresh!), and shallots for yellow onion. Perfect side dish with pan grilled pork chops. A crisp salad rounded out the meal. Thanks for sharing. I don't usually prepared creamy carrots but this was a nice change. Prepared for Best of 2015.
