Step by Step Method
Step 1
Preheat the oven to 450°F.
Step 2
Boil potatoes in salted water for about 10 minutes.Drain them in a colander.
Step 3
Saute spinach in olive oil and set aside.
Step 4
In a pan slowly fry the onion and carrot in olive oil for about 5 minutes; add the cream and bring just to the boil. Remove from the heat and add the cheese, lemon juice, mustard and parsley.
Step 5
Put the spinach, fish and eggs into an appropriately sized earthenware dish and mix together, pouring over the creamy vegetable sauce.
Step 6
The cooked potatoes should be drained and mashed - add a bit of olive oil, salt, pepper and a touch of nutmeg. Spread on top of the fish.
Step 7
Place in the oven for about 25-30 minutes until the potatoes are golden.
