Ingredients

The ingredients are:
  • 5 large potatoes (peeled and diced into 1 inch cubes)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 large eggs (hard boiled and quartered)
  • 200 grams fresh spinach
  • 1 yellow onion (finely chopped)
  • 1 carrot (halved and finely chopped)
  • 6 tablespoons olive oil (extra virgin, divided)
  • 300 ml cream
  • 200 grams cheddar cheese
  • 1 lemon, juiced
  • 1 teaspoon English mustard
  • 100 grams flat leaf parsley (finely chopped)
  • 500 grams cod fish (sliced into chunks)
  • 1/4 teaspoon nutmeg

How to Make

  • Step 1: Preheat the oven to 450°F.

  • Step 2: Boil potatoes in salted water for about 10 minutes.Drain them in a colander.

  • Step 3: Saute spinach in olive oil and set aside.

  • Step 4: In a pan slowly fry the onion and carrot in olive oil for about 5 minutes; add the cream and bring just to the boil. Remove from the heat and add the cheese, lemon juice, mustard and parsley.

  • Step 5: Put the spinach, fish and eggs into an appropriately sized earthenware dish and mix together, pouring over the creamy vegetable sauce.

  • Step 6: The cooked potatoes should be drained and mashed - add a bit of olive oil, salt, pepper and a touch of nutmeg. Spread on top of the fish.

  • Step 7: Place in the oven for about 25-30 minutes until the potatoes are golden.
