"This is actually my girl friends recipe; and, honestly ... I didn't think I would like it ... but, it's really good. Her family absolutely loves it. And, it literally takes just a couple of minutes to put together, which makes this a great weeknight dish. Also, she often adds cooked diced chicken or ham to make it a "One Pot Wonder." It is truly COMFORT FOOD."

Step by Step Method
Step 1
Sauce ... Add all the ingredients to a small bowl or measuring cup and mix well.
Step 2
Casserole ... Spray a casserole dish with a nonstick spray and add the tater tots and red peppers; pour the sauce over the top.
Step 3
Topping ... Finish with the cheese and french fried onions.
Step 4
Bake ... In a preheated 350 degree oven; bake for 40 minutes on the medium shelf, uncovered. until golden brown and bubbly.
Step 5
Serve and ENJOY! ... A perfect side dish to go with any main course. And, as mentioned, for a complete main dish, add cooked diced ham or chicken. I can't say that it is exactly healthy; but, it sure is tasty.
