Ingredients

The ingredients are:
  • 1 (32 ounce) bag tater tots (thawed and lightly broken up)
  • 1/4 cup red bell pepper, fine diced
  • SAUCE
  • 1/2 (10 ounce) can fat-free condensed cream of mushroom soup (99% fat free)
  • 1/2 cup 2% milk
  • 2 tablespoons ranch dressing
  • 2 teaspoons dried chives
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • TOPPING
  • 1/2 cup monterey jack and cheddar cheese blend
  • 1/2 cup onions (french fried onions)

How to Make

  • Step 1: Sauce ... Add all the ingredients to a small bowl or measuring cup and mix well.

  • Step 2: Casserole ... Spray a casserole dish with a nonstick spray and add the tater tots and red peppers; pour the sauce over the top.

  • Step 3: Topping ... Finish with the cheese and french fried onions.

  • Step 4: Bake ... In a preheated 350 degree oven; bake for 40 minutes on the medium shelf, uncovered. until golden brown and bubbly.

  • Step 5: Serve and ENJOY! ... A perfect side dish to go with any main course. And, as mentioned, for a complete main dish, add cooked diced ham or chicken. I can't say that it is exactly healthy; but, it sure is tasty.
