"My husband is a self proclaimed soup connoisseur. He loves to eat soup and make it. In the winter time, there is always a welcoming pot of soup on the stove-top that he is more than willing to offer up. Here is one of my favourites of his soup recipes."

Step by Step Method

Step 1

Heat the oil and butter in a dutch oven over medium-high heat.

Step 2

Add the celery, potatoes, onion, garlic, bacon and bay leaves and cook until onions are translucent.

Step 3

Pour in broth and add thyme, parsley and pepper and bring to a boil.

Step 4

Reduce heat and simmer for 30 minutes

Step 5

Remove bay leaves.

Step 6

Add the flour water mixture and stir.

Step 7

With an emulsion blender, puree until smooth.

Step 8

Place into bowls and garnish with the chopped celery leaves.

I decided to make this in the slow cooker while we were sleeping. I set it up at 2 AM and it finished by 9 AM. When I tasted it, it was extremely salty, which intially puzzled me as I used low sodium chicken broth and did not add any salt. Then I remembered that I had used a different brand of low sodium bacon which was much saltier then my normal brand. (No fault of the recipe). So in order to rectify the problem I added a cup of light cream. This made the soup creamier and it now had the perfect amount of salt. DH doesn't care for celery, so I told him it was a potato type soup. He loved it and it only goes to show me that he had no idea how much celery was in the soup. I also opted not to puree it giving it a more rustic appeal. Made for Billboard tag.

We both love this soup! I chose not puree it and leave it rustic. At first bite, DH shot me a glance that said he loved it and that I was to keep this recipe. I did render the bacon a wee bit then added the veggies, so did not use the oil/butter. And I did not thicken it either. Thank you Bea for posting your DH yummy soup! Made for Billboard Recipe Tag.

wow hubby can be proud of this soup , it is delicious and i'll be making it again thanks. I finished it off with a glob of no fat sour cream and the celery leaves and added half a teaspoon of black pepper. Don loved it and the smell of bacan while cooking filled the house, i think that's what Don loved the best. lolI froze the rest for lunches.

Engrossed

Delicious! This is an easy tasty and besides the bacon healthy soup to make. It surprised us that it looked and tasted similar to split pea soup. I like that it is so rich without any milk or cream in it. You do really have to search for the celery flavor but the flavor as a whole is very good. We were surprised the celery pureed so smooth without fibers. I did add double the thyme and a little bit of salt. I made a half recipe, which made 2 large servings. I omitted the oil, used a little spray oil and rendered the bacon a little in that before adding the veggies. It didn't say to but I peeled the potatoes and sliced the bacon into pieces. To make it more hearty for my Hubby, I added 3 links of sliced browned turkey kielbasa. I also sprinkled Hungarian paprika on top. We enjoyed it with homemade parkerhouse rolls on a cold rainy Autumn night. Freddy Cat says hi! Made for the recipebook tag game.
