Step by Step Method
Step 1
Bring the steaks to room temperature.
Step 2
Soak onions in milk in a large bowl for one hour, drain.
Step 3
In a bowl mix together the dry ingredients (flour - paprika).
Step 4
Dredge onions in flour mixture; shaking off excess.
Step 5
Heat oil in skillet until it reaches 360 degrees F. Add onions in batches, cooking until golden brown (about a minute or so for each batch); transfer to paper towels using a slotted spoon; drain well.
Step 6
Meanwhile season the steaks with salt and pepper and place in a cast iron or other heavy skillet (we use a grill pan - but these can be cooked on the grill for Father's Day) over medium high heat. Cook to desired doneness (5-10 minutes per side); pour off excess fat before turning. These can be finished off on a grill if desired.
Step 7
Transfer steaks to plates and serve with onion rings and salsa.
