Ingredients

The ingredients are:
  • 24 to 48 ounces bone-in beef rib eye steaks (four steaks, 6-8 ounce each, cut 1 1/2 inches thick, or your favorite steaks)
  • 4 yellow onions (cut into 1/16th or 1/8th inch rings)
  • 3 cups milk
  • All-purpose flour (sifted, 3 cups)
  • 1/2 cup chile powder
  • 2 tablespoons corn starch (plus 2 teaspoons corn starch)
  • 3 teaspoons salt
  • 3 teaspoons ground cumin
  • 2 teaspoons granulated sugar
  • 2 teaspoons paprika (hot)
  • Vegetable oil for deep frying
  • Salt and pepper
  • Salsa

How to Make

  • Step 1: Bring the steaks to room temperature.

  • Step 2: Soak onions in milk in a large bowl for one hour, drain.

  • Step 3: In a bowl mix together the dry ingredients (flour - paprika).

  • Step 4: Dredge onions in flour mixture; shaking off excess.

  • Step 5: Heat oil in skillet until it reaches 360 degrees F. Add onions in batches, cooking until golden brown (about a minute or so for each batch); transfer to paper towels using a slotted spoon; drain well.

  • Step 6: Meanwhile season the steaks with salt and pepper and place in a cast iron or other heavy skillet (we use a grill pan - but these can be cooked on the grill for Father's Day) over medium high heat. Cook to desired doneness (5-10 minutes per side); pour off excess fat before turning. These can be finished off on a grill if desired.

  • Step 7: Transfer steaks to plates and serve with onion rings and salsa.
