"We have been making this cornbread for years and serve it with chili. I've made some changes to the original recipe which was printed in Bon Appetit (December 1992)"

Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Spray 9 x 5 inch loaf pan with Pam and dust with cornmeal.

Step 3

In a large bowl mix dry ingredients (flour - salt).

Step 4

In a separate bowl combine wet ingredients (eggs - milk).

Step 5

Stir wet ingredients and corn into dry ingredients, stirring to combine.

Step 6

Pour batter into pan.

Step 7

Bake for one hour.

Didn't realize I was so low on cornmeal, so I made muffins with 1/2 of the recipe. Wonderful flavor - will make as a loaf after I get more cornmeal!

Ten stars! When FEM said it was "perfect", I knew I had to try it. And perfect it is. Moist, sweet, with a perfect crunch. We loved the corn kernels, which really upped the "corny" taste. I used butter in place of margarine or corn oil. Oh, and slathered again in butter and served alongside BBQ pulled pork. Yum!!! This one is going into my Best of 2024 file.

Holy Moly is this cornbread ever good. I know that the word “perfect” can get overused, but by no doubt is this bread ever perfect! From the crumb, taste, texture and the corn kernels strewn here-and-there makes it all so deliciously fabulous! In just minutes, this bread was almost gone, that’s how much I and the fam loved it. Sliding this one right into my Best Of file. Thank you, ellie, for sharing.

I've never made a cornbread loaf before and loved this. It was simple and good. The outside had a nice crunchy texture while the middle was moist. I'll be making this one again. Thanks for sharing, Ellie.

WhatamIgonnaeatnext?

This came out great! Very moist. I had to use oil instead of butter, but it was fine. P.S. I was having a migraine and just realized I only needed one cup of corn. I put in the whole bag and it still worked out fine. FYI
