Step by Step Method
Step 1
Preheat a sandwich press or jaffle maker.
Step 2
Whisk corn and eggs to combine and season with pepper.
Step 3
Spread mixture over 4 slices of bread and top with spinach and cheese and then sandwich together with remaining bread slices.
Step 4
Lightly spray both sides of sandwiches with oil and cook for 4 to 5 minutes or until golden and serve immediately.
