"I know that there are Copper Penny recipes all over the place. This is a tad different than the others, but very similar. These make a great side dish for any meal but especially for a cookout or picnic. They are served cold and go with anything. When I make them, I share them with my daughter as she loves them, too. It is a great way to get your carotene."

Step 1
Cook carrot slices still done; drain and rinse.
Step 2
Put carrots, green pepper, and onion into a bowl; set aside.
Step 3
In a saucepan mix the rest of the ingredients and bring to a boil, stirring until thoroughly blended; pour over veggies and refrigerate for at least one hour and better yet, for a few hours.
