Step by Step Method

Step 1

To make the coffee rub: mix all ingredients (coffee - salt) in a small cup or bowl. (****can be made up to one week ahead, stirred airtight at room temperature).

Step 2

To make the burgers: cook bacon in a skillet until crisp. Transfer to paper towels to drain and then break them in half. In a bowl mix together the chuck and sirloin. Form into 8 patties (3 1/2 - 4 inches round and 1/2 inch thick). Using your thumb make a slight indentation in center of each burger. ****can be made 8 hours ahead, covered separately and chilled.

Step 3

Prepare barbecue (medium high heat).

Step 4

Sprinkle 1 teaspoon of the coffee rub on top side of each burger. Place burgers, rub side down, on grill rack. Grill for 4-5 minutes or until charred; turn. Place 2 bacon slice halves atop each burger. Cook 3 minutes.Top each with 1 cheese slice. Cover and cook until cheese melts -- another minute.

Step 5

Place burgers atop bottom halves of buns. Top with onion and tomato slices. Spoon dollop of barbecue sauce over. Cover with bun tops and serve.

Delicious Burger. I cooked outside on a charcoal grill and it was nice and smokey. I'd like to try this inside to see if the coffee flavor comes through a bit more. Has anyone done that? Delicious!!

Great flavor from the rub! It added a nice flavor to the burgers. I also really enjoyed the smoked provolone and bbq sauce. Oh, and of course the bacon! Thank you!

Super Good Burgers! I wasn't sure what to expect, but the coffee rub was really a fantastic addition. They made them kinda crispy on the outside. I used an 80% ground beef and it came out so juicy. My husband said that it was one of the best burgers I made. Thank you, ellie, for sharing! Made it for Billboard Tag.
