Ingredients

The ingredients are:
  • FOR COFFEE RUB
  • 1 tablespoon ground coffee (freshly ground)
  • 2 teaspoon brown sugar
  • 2 teaspoons pepper
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • FOR BURGERS
  • 8 ounces sliced bacon (applewood-smoked bacon, 8 slices)
  • 1 pound beef chuck (ground)
  • 1 pound beef sirloin (ground)
  • 8 ounces smoked provolone cheese (or your favorite smoked cheese, 8 slices)
  • 12 ounces bread buns (8 hamburger buns)
  • Red onion slices (8 slices)
  • Tomato slices (8 slices)
  • Texas Barbecue sauce

How to Make

  • Step 1: To make the coffee rub: mix all ingredients (coffee - salt) in a small cup or bowl. (****can be made up to one week ahead, stirred airtight at room temperature).

  • Step 2: To make the burgers: cook bacon in a skillet until crisp. Transfer to paper towels to drain and then break them in half. In a bowl mix together the chuck and sirloin. Form into 8 patties (3 1/2 - 4 inches round and 1/2 inch thick). Using your thumb make a slight indentation in center of each burger. ****can be made 8 hours ahead, covered separately and chilled.

  • Step 3: Prepare barbecue (medium high heat).

  • Step 4: Sprinkle 1 teaspoon of the coffee rub on top side of each burger. Place burgers, rub side down, on grill rack. Grill for 4-5 minutes or until charred; turn. Place 2 bacon slice halves atop each burger. Cook 3 minutes.Top each with 1 cheese slice. Cover and cook until cheese melts -- another minute.

  • Step 5: Place burgers atop bottom halves of buns. Top with onion and tomato slices. Spoon dollop of barbecue sauce over. Cover with bun tops and serve.
