Step 1

In a small bowl, combine the coconut, sugar, flour, salt and vanilla; mix well.

Step 2

Stir in egg whites.

Step 3

Drop by rounded teaspoonfuls onto greased baking sheets.

Step 4

Bake at 325° for 18-20 minutes or until golden brown.

Step 5

Cool on a wire rack. Yield: about 1-1/2 dozen.

Well mine don't look all that great but they sure do taste good, I used x-large whites so I needed to add in way more flour, I also added in 1/2 teaspoon coconut extract, I used the whole 200 grams package of coconut which is about 2 cups, I also increased the sugar amount slightly. Thanks for a great coconut treat dienia!
