Step by Step Method
Step 1
Thoroughly mix sugar, cornstarch and salt in a saucepan.
Step 2
Gradually stir in the water.
Step 3
Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
Step 4
Remove from heat and add in lemon peel and butter.
Step 5
Gradually stir in lemon juice and food coloring.
Step 6
Cool and use to fill 8 or 9 inch cake.
