Step 1: Thoroughly mix sugar, cornstarch and salt in a saucepan.
Step 2: Gradually stir in the water.
Step 3: Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
Step 4: Remove from heat and add in lemon peel and butter.
Step 5: Gradually stir in lemon juice and food coloring.
Step 6: Cool and use to fill 8 or 9 inch cake.
