Step by Step Method
Step 1
Season the chicken with salt and pepper. In a large skillet over medium-high heat, heat 1 tablespoon of the oil, add the chicken and cook until browned but not cooked through, 3 to 5 minutes per side. Transfer the chicken to a plate; set aside.
Step 2
Heat the remaining 1 tablespoon oil, if necessary. Add the garlic, onion and cumin, and cook stirring constantly for 1 minute. Add the orange and lemon juices and the broth and stir to combine. Return the chicken to the skillet and bring to a simmer. Reduce the heat to medium-low, cover and simmer gently, turning the chicken occasionally, until the chicken is cooked through, about 25 minutes. Transfer the chicken to a platter; cover to keep warm. Continue to cook the sauce, stirring, for 1 minute or until slightly reduced. Spoon the sauce over the chicken and serve OR return the chicken to the skillet and coat with the sauce.
