Step by Step Method

Step 1

Season the chicken with salt and pepper. In a large skillet over medium-high heat, heat 1 tablespoon of the oil, add the chicken and cook until browned but not cooked through, 3 to 5 minutes per side. Transfer the chicken to a plate; set aside.

Step 2

Heat the remaining 1 tablespoon oil, if necessary. Add the garlic, onion and cumin, and cook stirring constantly for 1 minute. Add the orange and lemon juices and the broth and stir to combine. Return the chicken to the skillet and bring to a simmer. Reduce the heat to medium-low, cover and simmer gently, turning the chicken occasionally, until the chicken is cooked through, about 25 minutes. Transfer the chicken to a platter; cover to keep warm. Continue to cook the sauce, stirring, for 1 minute or until slightly reduced. Spoon the sauce over the chicken and serve OR return the chicken to the skillet and coat with the sauce.

This is really really good, light and refreshing. I did have boneless skinless thighs that HAD to be used up or tossed in the fridge so I used those for this recipe and LOVED it. I didn't bother taking the chicken out of the pan before making the sauce which worked out just fine. One other minor change: I sprinkled the cumin on with the salt and pepper prior to cooking and that worked really well. Super easy weeknight meal that my whole family enjoyed.

Made this as directed with mouth watering results. What a delicious chicken recipe. I served this with Derf's Lemon Roast Potatoes and both complemented each other quite well. This has been added to my regular rotation. Made for the Billboard Recipe Tag Game.
