"This is from The Frugal Gourmet Celebrates Christmas. I haven't made this one, but it sounds yummy and beautiful! I decreased the oil and gave the option to increase the herbs. Step by Step Method

Step 1

Heat oil in large frying pan and add the onion and garlic. Saute a few minutes until the onion begins to collapse.

Step 2

Add the bell peppers, oregano, and rosemary, and saute 5 minutes.

Step 3

Add the wine and continue cooking until the peppers are tender.

Step 4

Add salt and pepper to taste and parsley and toss together.

I made this with red and yellow peppers and used white wine instead of red. This was delicious, a great side to any main meat course.
