"This hearty big batch Corn Chowder is a meal in itself, our Corn Chowder go to. Perfect for lunches or evening meals on family weekends. When making for the two of us I freeze in meal size portions and add to my freezer stash. This chowder is very freezer friendly, great to have on hand for the times you need a meal in a hurry."

Step by Step Method

Step 1

In large pot make white sauce - lightly saute the 1/4 cup of minced onion and the 1/4 cup finely chopped celery in the butter

Step 2

Stir in flour, whisk in milk one cup at a time, whisking until nicely thickened. Pour the white sauce into a large measuring cup, cover with wrap and set aside

Step 3

Wash pot - place cleaned pot on medium heat. Add oil, lightly saute cubed chicken, onion and celery

Step 4

Stir in carrots and potatoes. Add in chicken broth(you need enough broth to have the vegetables well covered) Simmer to desired tenderness

Step 5

Add creamed corn and kernel corn. Simmer until kernel corn is done

Step 6

Whisk in the white sauce and seasonings stirring until blended and heated through

Step 7

Note - (when reheating chowder I prefer to reheat in the micro wave to avoid scorching)

this is delicious made as directed except I used about 6 cups of broth (2 cups chicken and 4 cups vegetable). I also used 3 cups skim milk and 1 cup half and half and used frozen corn. Wonderful soup served with hearty bread. Thanks for sharing!

I made this subbing turkey and it was so yummy! Didn't add the cayenne, but did add butter, salt and pepper for depth of flavor. We will have it again.

I absolutely loved it! I used 2 cans of creamed corn and 1 can of whole kernal to make the broth nice and creamy. I also substituted evaporated milk for half the milk and then used fat free half and half for the remainder of the milk, and I skipped the cayenne. Such a wonderful soup and one I will definitely make again. Thank you for posting this recipe for us Gerry! Linda

Awesome chowder! I did use a mixture of milks, 2%, skim and evaporated (had some open in the fridge). Added the cayenne and it lended a perfect amount of heat for us. I had 2 roasted chicken breasts that I added with the corn to heat through. Perfect dinner with a salad! Thank you for sharing Gerry! Made for Billboard Recipe Tag.
