"Not sure where I got this recipe from but I do know I have noted that it was a favorite of President Franklin D. Roosevelt. My family enjoys this simple to make meal. It reminds me of when I was first married and didn't know much about cooking. This was an easy one for me."

Step by Step Method

Step 1

Heat a large skillet over medium heat.

Step 2

Add beef and butter and cook until beef begins to curl, stirring frequently.

Step 3

Add flour and stir to combine.

Step 4

Add milk slowly while stirring until well combined.

Step 5

Simmer, stirring occasionally, until sauce thickens, about 10 minutes.

Step 6

Add optional seasonings or vegetables as desired.

Step 7

To adjust consistency: add more milk if the sauce is too thick; add a teaspoon of cornstarch combined with 1/4 cup cold water if it's too thin.

Step 8

Serve warm over toast or mashed potatoes.

Great easy recipe for chipped beef! I used Armour brand, our favorite, which is only 4.5oz. Yes, it's salty but we love it...I even eat it in sandwiches. I added fresh garlic, fresh ground pepper and frozen baby peas. We usually eat this over toast, but I had some mashed potatoes tagged along with this in the recipe tag games, so we had it that way, and it was a very nice comforting meal. I do think the butter could be cut down to lighten it. And if you're not a big salt eater, you can soak the meat in hot water and rinse it before cooking it.

Love it! If you don't like it so salty, you can always try using Budding brand beef in the 3, 4 (doubled) or the 8 oz packages :) Thanks for the recipe CoffeeB!!

Well, I guess it is true, you can't go home again! :) I used to love this when I was a kid (even though my dad, who was a merchant marine during WWII called this s**t on a shingle because they ate a LOT of it on board ship). I had to look in three stores to find the old chipped beef in a jar. I made the recipe as directed and the recipe is written fine, but BOY this stuff is REALLY salty!!!! I don't ever remember this brand of chipped beef being so salty (Hormel). So although I enjoyed the memories this brought back, I will have to stay away from it from now on, unless I can find a different, less salty chipped beef. But your recipe is well written and easy to follow.
