Step by Step Method

Step 1

In a large saucepan over medium high heat heat the oil. Stir in 1 1/2 cups onions and the next 3 ingredients (beef - garlic); saute until beer is cooked through (5 minutes).

Step 2

Stir in beans with liquid and tomatoes and simmer until thickened (15 minutes). Stir in cilantro, salt and pepper.

Step 3

To serve: place the sourdough toast on plates and top with the chili, cheese and remaining onion.

We loved this recipe! I really liked how the beans stretched the meal and made it more affordable, plus it was delicious. Followed as directed except we used hamburger rolls instead of sourdough bread... had to use what was in the pantry. Made for Billboard Tag in the forums.

My mom used to add baked beans to leftover sloppy joes and serve on a slice of bread and it became a favorite weekend meal for us when we were younger. This is a grown up version of mom's and we enjoyed it a lot. I doubled the ingredients but only used about 2 tablespoons of chili powder. Hubby used hamburger buns but I stuck with the sourdough bread and used Bush's kidney beans. A quick weekend lunch that will be a favorite for us. Nice flavor. This would be great over hamburger buns also. Too much chili powder for the light weight in our family but everyone else loved it.
