Ingredients

The ingredients are:
  • 2 tablespoons oil (olive oil)
  • 2 cups red onion, chopped, divided
  • 8 ounces ground beef
  • 2 1/2 tablespoons chili powder
  • 4 to 6 garlic cloves, pressed
  • 1 can (15 ounce) kidney beans (undrained)
  • 1/3 cup diced tomatoes (canned, drained)
  • 1/2 cup cilantro, chopped
  • TO SERVE
  • Sourdough bread slices (two slices 1/2 inch thick, toasted)
  • 1/2 cup cheddar cheese, shredded

How to Make

  • Step 1: In a large saucepan over medium high heat heat the oil. Stir in 1 1/2 cups onions and the next 3 ingredients (beef - garlic); saute until beer is cooked through (5 minutes).

  • Step 2: Stir in beans with liquid and tomatoes and simmer until thickened (15 minutes). Stir in cilantro, salt and pepper.

  • Step 3: To serve: place the sourdough toast on plates and top with the chili, cheese and remaining onion.
