"Everybody makes twice baked potatoes with ham or bacon. But I thought " Why not make it with leftover chicken ? " So that's what I did. I used leftover Fried Chicken,but you could use any type of cooked chicken. I bet BBQ Chicken would be REALLY good.The cooling time is included in the " PREP TIME ". Step by Step Method

Step 1

Bake potatoes at 375 degrees for 1 hour and 15 minutes.

Step 2

Cool potatoes for at least 30 minutes or until cool enough to handle without burning your fingers.

Step 3

Reheat the oven back to 375 degrees and prepare an 11 x 8 inch baking dish with cooking spray.

Step 4

Slice a small piece off the top and scoop out the insides into a small bowl,making sure you leave enough of a sturdy shell to hold the filling.

Step 5

Add 4 tablespoons of the margarine,salt and pepper to the potato pulp and mix well.

Step 6

Then add the chicken and cheese,then taste and adjust seasonings if needed(You want the chicken/potato mixture to be stiff ,but not too stiff.If needed add a small amount of milk).

Step 7

Stuff potato shells with as much of the mixture as you can,then stuff it some more. :)

Step 8

Here's where it gets a bit messy,divide remaining margarine and spread on the outside of the filled shells.

Step 9

Place in prepared baking dish and bake for 30 minutes or until top is slightly browned.
