Step 1: Bake potatoes at 375 degrees for 1 hour and 15 minutes.
Step 2: Cool potatoes for at least 30 minutes or until cool enough to handle without burning your fingers.
Step 3: Reheat the oven back to 375 degrees and prepare an 11 x 8 inch baking dish with cooking spray.
Step 4: Slice a small piece off the top and scoop out the insides into a small bowl,making sure you leave enough of a sturdy shell to hold the filling.
Step 5: Add 4 tablespoons of the margarine,salt and pepper to the potato pulp and mix well.
Step 6: Then add the chicken and cheese,then taste and adjust seasonings if needed(You want the chicken/potato mixture to be stiff ,but not too stiff.If needed add a small amount of milk).
Step 7: Stuff potato shells with as much of the mixture as you can,then stuff it some more. :)
Step 8: Here's where it gets a bit messy,divide remaining margarine and spread on the outside of the filled shells.
Step 9: Place in prepared baking dish and bake for 30 minutes or until top is slightly browned.
