Ingredients

The ingredients are:
  • 2 baking (4 ounce) potatoes
  • 5 tablespoons margarine (divided)
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon ground black pepper, or to taste
  • 1/2 cup cheddar cheese, shredded (or use what you like)
  • 6 ounces cooked chicken (chopped, leftover chicken)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Bake potatoes at 375 degrees for 1 hour and 15 minutes.

  • Step 2: Cool potatoes for at least 30 minutes or until cool enough to handle without burning your fingers.

  • Step 3: Reheat the oven back to 375 degrees and prepare an 11 x 8 inch baking dish with cooking spray.

  • Step 4: Slice a small piece off the top and scoop out the insides into a small bowl,making sure you leave enough of a sturdy shell to hold the filling.

  • Step 5: Add 4 tablespoons of the margarine,salt and pepper to the potato pulp and mix well.

  • Step 6: Then add the chicken and cheese,then taste and adjust seasonings if needed(You want the chicken/potato mixture to be stiff ,but not too stiff.If needed add a small amount of milk).

  • Step 7: Stuff potato shells with as much of the mixture as you can,then stuff it some more. :)

  • Step 8: Here's where it gets a bit messy,divide remaining margarine and spread on the outside of the filled shells.

  • Step 9: Place in prepared baking dish and bake for 30 minutes or until top is slightly browned.
