Step 1

Combine all batter ingredients in a large bowl and let sit for 2-3 hours

Step 2

Cut chicken breasts into 3x1-inch strips

Step 3

In a large bowl, combine lime juice, rum, salt and pepper. Add chicken and let marinade for 30 min

Step 4

In a wok or a deep skillet heat 6 cups oil to 350F

Step 5

Pat chicken pieces dry and dip into batter

Step 6

Carefully add a few pieces of chicken at a time to hot oil and cook 5-6 min, or until golden

Step 7

Drain on paper towel

Step 8

Combine all dip ingredients in a small bowl and serve with chicken curls
