The ingredients are:
  • FOR THE BATTER
  • 1 1/2 cup all purpose flour
  • 2 eggs
  • 1 teaspoon salt
  • 2 tablespoons oil
  • 341 ml beer
  • FOR THE CHICKEN
  • 1 1/2 pound boneless skinless chicken breast
  • 2 tablespoons lime Juice
  • 2 tablespoon rum
  • Salt and pepper to taste
  • 6 cups oil
  • FOR THE DIP
  • 1/4 cup honey
  • 1/4 Dijon mustard
  • 1 teaspoon horseradish

How to Make

  • Step 1: Combine all batter ingredients in a large bowl and let sit for 2-3 hours

  • Step 2: Cut chicken breasts into 3x1-inch strips

  • Step 3: In a large bowl, combine lime juice, rum, salt and pepper. Add chicken and let marinade for 30 min

  • Step 4: In a wok or a deep skillet heat 6 cups oil to 350F

  • Step 5: Pat chicken pieces dry and dip into batter

  • Step 6: Carefully add a few pieces of chicken at a time to hot oil and cook 5-6 min, or until golden

  • Step 7: Drain on paper towel

  • Step 8: Combine all dip ingredients in a small bowl and serve with chicken curls
