Cheesy Potato Casserole (Cracker Barrel Hashbrown Casserole)

"Another go to recipe for making a potato side dish that is as delicious as it is easy! This is like the one at cracker barrel, but I add jalepenos. I always add hot sauce on top. (You can see it in the pics)"

Step 1

Spray 9x13 pan with grease, and preheat oven to 375°.

Step 2

Combine 4 tablespoons melted butter with the sour cream, milk, cheese, soup, jalepenos, and potatoes. Salt and pepper to taste.

Step 3

Pour into prepared pan.

Step 4

In a separate bowl combine the rest of the melted butter, cornflake crumbs and parmesan cheese. Sprinkle this over the top of the casserole.

Step 5

Bake at 375° for 30-40 minutes.

mmm good ! creamy and rich, would be great for a buffet table. I just made a small one and instead of sour cream used plain yogurt. I left out the corn flake/butter topping and just topped it with old sharp white cheddar, which i also used inside. Mine took almost an hour to bake, it may have been thicker than useing a 9x13. Thanks for posting.
