"Rich, yes but worth all the fat and calories! I've used leftover turkey in place of the chicken, some other options I have used with success; add in some sauted mushrooms or canned sliced, saute a yellow onion and 2 garlic cloves with spinach, added in some sun-dried tomatoes, Greek yogurt instead of sour cream, the possibilities with this is endless, whatever you should decide to add in it will be delicious and even if you make it just as is I know it will be great also! Double amounts if you are going to serve more that six people"

Step by Step Method

Step 1

Preheat oven to 350 F.

Step 2

Butter a 9x9 inch baking pan.

Step 3

Steam spinach, cool then squeeze out all excess water using your hands.

Step 4

In a bowl, Combine sour cream, mayonnaise, 1 cup mozzarella cheese, Parmesan cheese, garlic powder, salt & pepper.

Step 5

Pour half the cheese mix into a baking pan.

Step 6

Top with the chicken and sauted spinach, then remaining cheese mixture. Sprinkle remaining 1 cup mozzarella cheese over top.

Step 7

Bake for 45 minutes.

So delicious!! I did add mayo/sour cream mixture to 1 c. ea. I also added cooked penne pasta and mixed it all together in a greased casserole dish.

As soon as I saw this recipe I ran to my kitchen to make it, I had frozen chicken and spinach in my freezer plus all other ingredients, so it only took minutes to prepare, yes rich but absolute creamy heaven, I LOVE this recipe and I plan on making it again for the holidays but I will triple amounts, I baked mine in a 8 x 8-inch dish and it was not very high, when I make it again with amounts as written I'm thinking of possibly baking it in a glass loaf pan, however it is a fantastic tasting creamy spinach recipe I'll make many more times, thank you very much for sharing your recipe here CheapCook! My photos show a prebaked and then baked.
