Cheesy Canadian Bacon & Egg Stuffed Potato Halves

"This makes a fantastic breakfast, brunch, or lunch; but, also dinner along side a small salad. But, if serving it for dinner; I usually use a full potato; but, for breakfast or lunch, I make potato halves. Also, I like to microwave the potatoes to give them a head start; then, finish them in the oven. Now, you can use your favorite cheese in this recipe; although I prefer a swiss or gruyere, which I think works best. Now, this recipe makes 4 halves; or, 2 full potatoes - however, you may have a little leftover filling. And, if you do; simply bake in a ramekin; and, then add to a flour tortilla and wrap - it makes a great breakfast. I often make this same filling ... just to make the breakfast wraps, it is that good. You can easily prep these ahead up to the finishing point (refrigerate); then, put in the oven to finish. Perfect for entertaining."

Step by Step Method
Step 1
Potatoes ... I actually like to microwave them to start. This isn't necessary; but, it definitely cuts down on the cooking time. You can always use the classic oven method. In a 350 degree oven, middle shelf for 40-50 minutes.
Step 2
For either method; simply clean your potato well, rub or brush with oil - and, season with salt and pepper. Set on a plate, and place in the microwave; and, cook approximately 8-10 minutes on medium high to high heat. After 5 minutes, flip them over. Now, realize that every microwave is different; but, this how long mine usually take (9 minutes in my microwave). You DO NOT want them shriveled or overdone; just tender, so you can scoop out of flesh. If you can stick a knife in them easily, they're done.
Step 3
Now, if using the microwave method ... after the 'spuds' are done; place in a preheated 400 degree oven for 10 minutes, flipping once. This will crisp up the skin. Once the skin is slightly crisp; remove from the oven to cool.
Step 4
Canadian Bacon ... As the potatoes cook; cook the Canadian bacon. Simply pan saute until lightly crisp (about 5 minutes). I used a non-stick pan; and, just a little non stick spray (you can also use a little butter if you want, but not necessary). Then, set on a plate lined with a paper towel to drain. Once drained, add the bacon to a bowl.
Step 5
Filling ... First thing, if you crisped up your potatoes in the oven, it was at 400 degrees - now, turn it down to 375 degrees. Back to the potatoes - Once slightly cooled, cut the potato in half lengthwise; and, scoop out most of the inside using a spoon - be careful; and, do not break through the skin. Add the potato to the bowl with the bacon. Then, add the sour cream, butter, cheese, chives, and salt and pepper; taste and adjust your seasoning if necessary. Then, add the eggs (beaten well), and mix until everything is combined.
Step 6
Stuff and Bake ... Stuff your potatoes (as much as you can fit in); and, place on a baking sheet, lined with foil or parchment paper (for easy clean up). There will probably be a bit extra; simply add to a small gratin dish sprayed with a non-stick spray, or lined with foil. Then, bake at everything at 375 degrees, on the middle shelf; until the eggs are set, and the cheese is melted (about 12-15 minutes). The last couple of minutes, add the parmesan on top. If you want, you can turn on your broiler to brown and crisp up the parmesan; but, I don't find it necessary.
Step 7
Serve and ENJOY! ... Garnish with a few extra chives. A small salad, cup of soup, or fruit makes a simple side. As mentioned, it makes a great breakfast, brunch, lunch or dinner. Also, don't be afraid to use other cheeses, herbs or scallions in the filling. Don't be afraid to make it your own.
