Step by Step Method

Step 1

In a large sauce pan, cook beef and onion over medium heat until the meat is not longer pink. Drain well.

Step 2

Meanwhile premix the flour with the milk. Set aside.

Step 3

Add the water, bouillon, salt, potatoes and celery to the meat mixture.

Step 4

Bring to a boil. Reduce heat and simmer for 20 minutes or until thickened and potatoes are tender.

Step 5

Stir in milk mixture and cheese. Heat thoroughly.

I've been having some stomach problems, so I had to use just the green parts of scallions for the onions, and used almond milk for the milk. Otherwise I made it as posted except for increasing the ingredients just a bit. I thought this was very good.... and a plus was that my son ate this and he normally won't eat any type of "soup". Took leftovers to work for lunch today, and it was just as good the 2nd day. It does look kind of "gray", so not very photo friendly, but a delicious soup for a cool night here in Florida!
