Step by Step Method

Step 1

Preheat oven to 400ºF.

Step 2

In a large pan prepare macaroni and cheese dinner according to package directions omitting the butter.

Step 3

Meanwhile, in a large nonstick skillet add the lean ground beef and cook on medium-high heat. Drain well and add the tomatoes and oregano mixing well to combine. Bring ground beef mixture to a boil.

Step 4

Add the ground beef to the macaroni and cheese, stir carefully. Spoon mixture into a 9-inch square baking dish and sprinkle the cheddar cheese over top. Bake for 10 minutes or until cheese is melted and the casserole is heated through.

I made this for two events, " Billboard Recipe Tag " and " What's On The Menu ? " . Due to what was on hand a couple of changes were made to the recipe. Instead of using the Kraft products, I used a box of Annie's Organic Shells & Cheddar ,for the cheese I used Kroger's store brand. Instead of stewed tomatoes, I used the same size can of diced that were already seasoned with Basil,Garlic, & Oregano. And I also added the oregano that was called for in the recipe. Instead of transferring the meat/pasta mixture to a baking dish, I just added the shredded cheese to the top and covered with a lid until melted. This is a very ,very,good " whatever you have on hand " pantry meal. Thanks a bunch for posting so others might enjoy this as much as we did. " Keep Smiling :) "

I have to say that I was surprised at how good this was! A real comfort food - hubby was excited about leftovers, he thought it was a winner as well. I did cut the ground beef down by half and drained the tomatoes otherwise I worried that it would be too runny. Also sprinkled with cayenne with gave it a little kick.
