Step by Step Method

Step 1

Boil cauliflower until tender; drain. Mash in large bowl. Add bread crumbs, Parmesan cheese, eggs, salt, pepper and garlic; Mix well.

Step 2

Heat olive oil in heavy skillet. Shape cauliflower mixture into small patties. Drop into heated oil and cook until slightly brown. Serve hot as a vegetable or cold as an appetizer.

These were great even my kids liked them! I wonder if I could use broccoli instead of cauliflower next time, I think I will try that, thanks for your great recipe, I will make these again!
