Ingredients

The ingredients are:
  • 1 cauliflower head
  • Italian seasoned bread crumbs (about 1 cup, or as needed)
  • 1/2 cup Parmesan cheese, fresh grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 garlic clove, minced (or 1/2 tsp. garlic powder)
  • 1 to 2 eggs, large (depending on size of cauliflower, use 2 eggs if the cauliflower is large)
  • Olive oil

How to Make

  • Step 1: Boil cauliflower until tender; drain. Mash in large bowl. Add bread crumbs, Parmesan cheese, eggs, salt, pepper and garlic; Mix well.

  • Step 2: Heat olive oil in heavy skillet. Shape cauliflower mixture into small patties. Drop into heated oil and cook until slightly brown. Serve hot as a vegetable or cold as an appetizer.
