Step by Step Method
Step 1
Wash the potatoes under cold running water, arrange on a baking tray, sprinkle salt and bake the potatoes at 350 degrees F for 60 minutes or until softened.

Peel the potatoes when warm and cut them into small dice.

Chop celery, onions and chives.

For Dressing:

Combine mayonnaise, salt, crushed pepper, stone ground mustard and heavy cream (eyeball the cream).

Whisk it together.

Salad:

In a mixing bowl, place the cooked potatoes, prepared sauce, diced celery, diced onions, and minced chives.

Add salt & cracked black pepper to taste while the potatoes are still warm.
Step 10
Adjust seasoning.

Cool the salad immediately by layering on a tray and refrigerating.
Step 12
Add more mayonnaise if needed after it cools.
Step 13
Top with minced chives.
