Step by Step Method

Step 1

Wash the potatoes under cold running water, arrange on a baking tray, sprinkle salt and bake the potatoes at 350 degrees F for 60 minutes or until softened.

Peel the potatoes when warm and cut them into small dice.

Chop celery, onions and chives.

For Dressing:

Combine mayonnaise, salt, crushed pepper, stone ground mustard and heavy cream (eyeball the cream).

Whisk it together.

Salad:

In a mixing bowl, place the cooked potatoes, prepared sauce, diced celery, diced onions, and minced chives.

Add salt & cracked black pepper to taste while the potatoes are still warm.

Step 10

Adjust seasoning.

Cool the salad immediately by layering on a tray and refrigerating.

Step 12

Add more mayonnaise if needed after it cools.

Step 13

Top with minced chives.

We enjoyed this potato salad. I have never baked potatoes for potato salad before and love this technique and will do again. Delicious as is but maybe next time will add hard boiled eggs. Thanks for sharing!
