  • 4 pounds potatoes
  • 1 cup celery, diced
  • 1 cup red onion, diced
  • 1 tablespoon chives, minced
  • 1 cup mayonnaise
  • 1 tablespoon stone ground mustard
  • 2 ounces heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed black pepper, to taste

How to Make

  • Step 1: Wash the potatoes under cold running water, arrange on a baking tray, sprinkle salt and bake the potatoes at 350 degrees F for 60 minutes or until softened.

  • Step 2: Peel the potatoes when warm and cut them into small dice.

  • Step 3: Chop celery, onions and chives.

  • Step 4: For Dressing:

  • Step 5: Combine mayonnaise, salt, crushed pepper, stone ground mustard and heavy cream (eyeball the cream).

  • Step 6: Whisk it together.

  • Step 8: In a mixing bowl, place the cooked potatoes, prepared sauce, diced celery, diced onions, and minced chives.

  • Step 9: Add salt & cracked black pepper to taste while the potatoes are still warm.

  • Step 10: Adjust seasoning.

  • Step 11: Cool the salad immediately by layering on a tray and refrigerating.

  • Step 12: Add more mayonnaise if needed after it cools.

  • Step 13: Top with minced chives.
