Step by Step Method
Step 1
In a saucepan combine water sugar and cayenne and bring to a boil over high heat; stirring until sugar dissolves.
Step 2
Add walnuts; reduce heat to medium and cook until syrup boils and nuts are very sticky (30-40 minutes).
Step 3
Meanwhile pour enough vegetable oil in a heavy saucepan to reach a depth of 4 inches and heat the oil to 350 degrees F.
Step 4
Drain walnuts, discarding syrup, and working in batches and a slotted spoon, transfer walnuts to hot oil and cook until browned (2-5 minutes per batch), stir constantly. Using a slotted spoon transfer walnuts to a rimmed baking sheet. Sprinkle with the salt and cool completely.
