Step by Step Method

Step 1

Preheat your oven or camp oven, its temperature should be 200°C.

Step 2

Grease a 20-23cm square baking dish, or use a square, deep-sided foil tray but use a dish that fits inside your camp oven.

Step 3

In a large bowl, whisk the eggs and cream or milk and add the remaining ingredients and stir until well mixed.

Step 4

Pour ingredients into the prepared baking dish and place it in the hot oven and bake for about 25 minutes or until golden brown and cooked right through.

Step 5

TIP AND VARIATIONS - Cooking time of 25 to 30 minutes will depend on how deep your dish is. Make sure you place your baking dish on a trivet at the bottom of your camp oven before baking. For an evening meal, you could serve the omelette with a simple green salad and some fresh bread. You can add whatever you want to your omelette, such as mushrooms, tomatoes, bacon, cooked sausage pieces, green capsicum, spinach, fresh herbs and more. Take time to sauté the onion, bacon and vegetables in a little oil or butter before adding them to the egg mixture. It is worth the effort as you’ll get a much better flavour.

Very tasty omelet indeed and loved the addition of scallions. I think this is my first time using them in an omelet and will continue on doing so! We enjoyed it for omelet night/breakfast for dinner (made 3 – all different ones and this one shined!). Very sorry in not having followed the direction in placing into a pan and into oven, but I was distracted while I was cooking (was speaking to my daughters friend who was visiting). I realized my error a bit too late, but followed the rest, except for cutting eggs down to 6 and reduced cream to compensate. Thank you, Pat, for sharing. Made it for FYC.
