Roll out on floured board to 1/8 inch. Cut out with 2 inch cutter
Put 1 teaspoon of filling in middle of one cookie and top with another cookie. Pinch together with tines of fork
Whip egg white slightly and brush on top of cookie
Bake 15 minutes at 400 degrees
