Step 1: In saucepan, combine filling ingredients and cook until thickened
Step 2: Meanwhile, cream the butter and sugar together. Add egg
Step 3: Sift dry ingredients together
Step 4: Add vanilla to milk. Add alternately to creamed mixture with dry ingredients mix thoroughly
Step 5: Roll out on floured board to 1/8 inch. Cut out with 2 inch cutter
Step 6: Put 1 teaspoon of filling in middle of one cookie and top with another cookie. Pinch together with tines of fork
Step 7: Whip egg white slightly and brush on top of cookie
Step 8: Bake 15 minutes at 400 degrees
