Step by Step Method
Step 1
In a large skillet, sauté green pepper, onion and garlic in oil for 3 minutes.
Step 2
Stir in broth and cumin (to taste, I like less).
Step 3
Bring to a boil.
Step 4
Add black beans, pinto beans, tomatoes, corn and vinegar.
Step 5
Reduce heat, cover and simmer for 15 minutes.
Step 6
Season to taste.
