The ingredients are:
  • 1/2 cup green bell pepper, diced
  • 1 cup onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 14 ounces chicken broth (1 can)
  • 1/2 teaspoon ground cumin, to taste
  • 15 ounces black beans, drained (1 can)
  • 16 ounces pinto beans, drained (1 can)
  • 10 ounces diced tomatoes and green chilies, undrained (1 can)
  • 10 ounces frozen corn, thawed
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: In a large skillet, sauté green pepper, onion and garlic in oil for 3 minutes.

  • Step 2: Stir in broth and cumin (to taste, I like less).

  • Step 3: Bring to a boil.

  • Step 4: Add black beans, pinto beans, tomatoes, corn and vinegar.

  • Step 5: Reduce heat, cover and simmer for 15 minutes.

  • Step 6: Season to taste.
