"a Coconut and lemon flavored cake like textured muffin. One of my main muffins I have substituted other flavored yogurts and bits of the fruit featured for different flavors and used streusel topping from my streusal topped fruit muffins."
Large bowl combine flour, sugar, baking powder, baking soda and salt.
In another bowl beat yogurt, egg, butter, lemon peel and lemon juice until smooth; Stir into dry ingredients until just moistened.
Fold in the coconut. Fill greased muffin cups 2/3 full
Bake 18-22 minutes or golden brown. Cool 5 minutes before removing to wire rack.
Saucepan, combine lemon juice and sugar; cook and stir until sugar is dissolved. stir in coconut.
Use toothpick and poke 6-8 holes i each muffin. Spoon the mixture over muffins. Serve warm or cool to room temperature
